Apple-Ginger-Currant Muffins

  • 2 cups self-rising flour
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 cloves
  • 1/4 teaspoon allspice
  • 1/2 C butter
  • 1/2 C white stevia
  • 1/2 C coconut sugar
  • 2 mashed bananas11/4 tsp vanilla
  • 3 apples, peeled (1-shredded and 2 chopped)
  • 1/2 C currants
  • 1/4 cup chopped crystalized ginger
  • 2 tablespoons light cream
  • Topping
  • 1/3 C monkfruit sugar
  • 1 Tbsp pecan
  • 1/8 tsp cinnamon
  • 1 Tbsp honey

Directions

    Preheat oven to 375 degrees. Grease muffin pan.

    Combine flour, baking soda, salt, cinnamon, allspice, cloves and nutmeg in first medium bowl.

    In another bowl, beat the butter, sugars and bananas together until smooth.

    Mix in vanilla.

    Add in apples, currants, ginger and cream
  6. 6
    Gradually add in the flour mixture.

    Spoon the mixture into greased or lined muffin pan.

    In another small bowl combine the topping ingredients

    Place on top of each uncooked muffin.

    Bake for 20 minutes.
