  • 6 eggs, separated
  • 1 1/4 c. sugar
  • 1/2 c. flour
  • 1/2 c. cornstarch
  • 1/2 c. butter, softened
  • grated lemon rind from 1/2 lemon
  • 2 lb. apples, peeled and sliced in quarters
  • powdered sugar

    Beat egg whites stiff; add sugar little by little.

    Add egg yolks one by one.

    Add lemon peel.

    Sift flour and cornstarch together.

    Add to egg-sugar mixture.

    Add butter; mix thoroughly. Place dough in a well-buttered and floured 9 x 13-inch pan or two 9 x 9-inch pans.

    Layer apples on dough, making a nice pattern. Bake at 350° to 360° for 45 minutes.

    Sprinkle powdered sugar over top to serve.
