  • 3 cups diced apples
  • 1 cup julienned cooked roast beef
  • 1 cup thinly sliced celery
  • 4 green onions, thinly sliced
  • 1/4 cup minced fresh parsley
  • 1/3 cup vegetable oil
  • 2 tablespoons cider vinegar
  • 1 garlic clove, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • Lettuce leaves

Directions

    In a bowl, combine the first five ingredients. In a small bowl, combine oil, vinegar, garlic, salt and pepper; mix well.

    Pour over apple mixture; toss to coat. Cover and refrigerate for at least 1 hour. Serve on lettuce.
