- 3 cups diced apples
- 1 cup julienned cooked roast beef
- 1 cup thinly sliced celery
- 4 green onions, thinly sliced
- 1/4 cup minced fresh parsley
- 1/3 cup vegetable oil
- 2 tablespoons cider vinegar
- 1 garlic clove, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Lettuce leaves
Directions

1In a bowl, combine the first five ingredients. In a small bowl, combine oil, vinegar, garlic, salt and pepper; mix well.
