- 6 oz. jam Swiss roll (jelly roll)
- grated rind and juice of 1 large lemon
- 1 1/4 lb. apple puree, unsweetened
- 2 egg whites
- 1 oz. sugar
Directions

2Sponge cake may be used in place of Swiss roll.

3Slice Swiss roll and arrange in base of a 2 pint souffle dish.

4Spoon over rind and juice of lemon. Spread apple on top.

5Whisk egg whites until stiff and whisk in 1/2 of sugar until meringue is stiff again.

6Pile on top of apple and make peaks.

7Dredge with remaining sugar.

8Bake at 300° for about 30 minutes.

9Serve warm.
