- 1/4 c. plus 2 Tbsp. brown sugar
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1/4 tsp. salt
- 1 1/2 c. peeled, shredded Rome apple
- 3/4 c. plus 2 Tbsp. buttermilk
- 2 Tbsp. vegetable oil
- 1 tsp. vanilla extract
Directions

1Combine first 6 ingredients in a large bowl.

2Make a well in center of mixture.

3Combine apple and next 3 ingredients and stir well.

4Add to dry ingredients, stirring just until moistened. Divide batter evenly among 12 muffin cups sprayed with cooking spray.

5Bake at 400° for 28 minutes or until a wooden pick comes out clean.

6Remove from pans immediately.

7Let cool on a wire rack.
