- 1/2 c. unsalted butter
- 2 eggs
- 1 1/8 c. sugar
- 3 c. flour
- 3 tsp. baking powder
- 1/2 tsp. salt
- pinch of baking soda
- 1 c. apple juice
- 1 tsp. vanilla
- 2 c. diced apples
- cinnamon sugar
Directions

1Grease 2 (12 hole) muffin pans; set aside.

2Preheat oven to 400°.

3In a large bowl, cream together butter, eggs and sugar. Reserve 3 tablespoons flour.

4In medium bowl, combine remaining flour, baking powder, salt and baking soda.

5Add vanilla to apple juice.

6Alternately add apple juice and flour mixture to creamed butter and egg mixture.

7Place apples in large bowl; sprinkle with reserved flour and turn gently until apples are lightly coated, then fold into batter.

8Fill each muffin pan 3/4 full and sprinkle with cinnamon sugar.

9Bake 15 to 20 minutes or until muffins pull away from sides of pan and turn golden brown.
