  • 5 to 6 c. apples
  • 1/2 to 2/3 c. white or brown sugar (depending on tartness of apples)
  • 1 Tbsp. cornstarch
  • 1/4 tsp. cinnamon
  • 1/8 tsp. nutmeg
  • 1 Tbsp. lemon juice
  • 1/2 tsp. grated lemon rind
  • 1 tsp. vanilla

    Preheat oven to 450°.

    Line 9-inch pie plate with pie crust. Peel and core and cut apples into very thin pieces.

    Cover pie with a pricked upper crust.

    Bake at 450° for 10 minutes; reduce heat to 350° and bake for an additional 45 minutes or until done.
