Apple Pie Breakfast Quinoa

Ingredients

  • 1 cup uncooked quinoa
  • 2 cups almond milk
  • 2 apples, cored and diced
  • 1 tablespoon coconut sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon clove
  • 1/8 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • pecans, for topping to taste
  • maple syrup, for topping to taste

Directions

    Add everything except for pecans and maple syrup to a saucepan. Bring to a boil, cover and reduce to simmer for 20-25 minutes.

    When the apples are soft, and quinoa has absorbed the water, fluff the quinoa with a fork.

    Pour into bowls and top with maple syrup and pecans.
