  • 2 pounds Yukon Gold Potatoes, Skin On, Cubed
  • 2 whole Granny Smith Apples, Peeled, Cored And Cubed
  • 4 ounces, weight Light Cream Cheese
  • 1/4 cups Fat-free Half-and-half
  • Salt And Pepper, to taste

Directions

    Boil the cubed potatoes and apples in a large pot of salted water over medium heat until they are fork tender (this should take between 10 and 20 minutes - test with a fork to determine doneness). Once fully cooked, drain off the water and return potatoes and apples to the pot. Add the cream cheese and half and half and use a potato masher to mash until everything is combined. Season with salt and pepper.
