Apple Pound Cake

  • 3 c. all-purpose flour (add 1/4 c. if using cake flour)
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1-1/2 c. corn oil
  • 2 c. sugar
  • 3 large eggs
  • 2 tsp. vanilla
  • 1-1/2 c. chopped pecans
  • 2-1/2 c. finely chopped apples

Directions

    Prepare apples and cover with water with two Tbsp. of lemon juice and set aside.

    Sift flour, soda and salt and set aside. Use a large bowl and beat oil, sugar, eggs and vanilla at medium speed until well blended.

    Gradually add flour mixture and beat until smooth.

    Fold in drained apples and pecans.

    Prepare a greased and floured tube pan and bake in 325° oven for 1-1/2 hours.
