Apple Pound Cake

  • 1 3/4 c. sugar
  • 1 1/2 c. oil
  • 3 eggs
  • 2 tsp. vanilla
  • 3 c. flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 2 c. finely chopped apple
  • 1 c. chopped pecans
  • 1/2 c. raisins

    Preheat oven to 325°.

    In a large bowl, beat together sugar, oil, eggs and vanilla at medium speed.

    Gradually add flour, soda, salt, cinnamon and nutmeg.

    (Batter will be stiff.)

    Fold in apples, nuts and raisins.

    Pour into greased and floured 10-inch tube pan.

    Bake 1 hour and 15 minutes.

    Cool cake on rack 10 minutes.

    Remove from pan to cool completely.

    Wrap well to store.
