Apple Rice Pudding

Ingredients

  • 2 c. water
  • 1 c. rice
  • 2 Tbsp. margarine
  • 2 c. milk
  • 7 oz. jar Marshmallow Creme
  • 2 c. chopped, peeled apples
  • 1/2 c. chopped nuts
  • 1/2 c. raisins
  • 1/2 tsp. cinnamon
  • 2 eggs, beaten

Directions

    Bring water to a boil in 3-quart saucepan.

    Stir in rice and margarine; cover.

    Reduce heat; simmer 20 minutes.

    Remove from heat; stir in Marshmallow Creme.

    Add all remaining ingredients except eggs.

    Mix well.

    Stir in eggs.

    Pour into greased 2-quart casserole.

    Bake at 350° for 1 hour, stirring after 30 minutes. Serve warm or chilled.
