  • 2 c. skimmed milk
  • 1 envelope (four 1/2-c. servings) reduced-calorie vanilla instant pudding mix
  • 1/3 c. apple juice (unsweetened)
  • 1 tsp. each: brown sugar and lemon juice
  • 1/2 tsp. cinnamon
  • 1/2 lb. apples, pared and minced
  • 2 Tbsp. golden raisins
  • 1/4 c. thawed frozen dairy whipped topping
  • ground nutmeg

Directions

    Prepare pudding with milk according to directions; set aside. In nonstick skillet, combine

    apple juice, sugar, lemon juice and cinnamon and bring to a boil.

    Add apples and raisins and cook until tender.

    Stir frequently until juice is reduced, 2 to 3 minutes.

    Add to pudding.

    Divide into 4 servings and cover until set.

    To serve, top each cup with 1 tablespoon of whipped topping and nutmeg.
