- 5 apples, peeled, cored and diced
- 1/4 c. diced salt pork
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 1/4 c. fresh parsley, chopped
- 2 c. bread crumbs
- 1/2 c. sugar
Directions

1Fry salt pork until crisp, remove salt pork from skillet. Cook celery, onion and parsley in pan with fat from salt pork until tender.

2Add diced apples, sprinkle with sugar, cover and cook until juice evaporates and apples are candied.

3Add other ingredients and finish cooking.

4Stuff your fish, season with salt and pepper and lemon juice to taste.

5Bake at 325° until done.
