  • 4 pounds, 6-5/8 ounces, weight Apples

    Cut the apples in quarters (don't peel them). Add a few tablespoons of water and bring to the boil. Cook until the apples are very soft. Put them in a clean dishcloth and press out all the fluid in a large pan. Cook this juice on high heat until it becomes a syrup (a drop falling from a spoon makes a thread). Allow the syrup to cool down completely.
