  • 3/4 c. chocolate graham cracker crumbs
  • 1/4 c. sugar
  • 1/2 c. finely chopped nuts
  • 1/4 c. melted butter
  • 3 (8 oz.) pkg. cream cheese
  • 1 c. sugar
  • 2 eggs
  • 2 tsp. vanilla
  • 1 c. sour cream
  • 2/3 c. sugar
  • 1 tsp. cinnamon
  • 2 dashes nutmeg
  • 2 Tbsp. flour
  • 2 c. peeled, sliced apples
  • 1/3 c. salted pecans
  • 14 caramels + 1 Tbsp. water
  • 1/3 c. chocolate chips plus 1 tsp. shortening
  • Rollo candies

Directions

    Mix crumbs, 1/4 cup sugar and nuts together.

    Stir in butter and blend well.

    Put in 9-inch spring-form pan to form crust.

    Beat cream cheese, 1 cup sugar, eggs, vanilla and sour cream.

    Combine sugar, cinnamon, nutmeg and flour.

    Toss with apples.

    Pour 1/2 cheesecake mixture into crust lined pan.

    Arrange 1/2 apples in concentric circle over cheesecake layer.

    Pour 1/2 the remaining cheese over apples.

    Arrange balance of apples over cheese layer and top with remaining cheese mixture.

    Bake at 350° for 1 hour. Cool, then refrigerate overnight.
