  • 1/4 cup butter plus 3 tbs, divided
  • 1/2 cup brown sugar packed
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon mace
  • 3 each apples
  • 2 teaspoons lemon juice
  • 113 cups cake flour
  • 3/4 cup sugar
  • 1 3/4 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 each eggs separated

    Preheat oven to 375~.

    Melt 1/4 cup butter in 8-inch square baking pan.

    Add brown sugar and spices; mix well.

    Peel apples.

    Remove cores; discard.

    Cut apples into rings.

    Arrange over brown sugar mixture in bottom of pan; sprinkle with lemon juice.
