  • 6 None Granny Smith apples, peeled, cored and quartered
  • 3 1/2 tbsp butter, chopped
  • 2 tbsp sugar
  • 1/2 tsp ground allspice
  • 1 tbsp lemon juice
  • 2 strips lemon zest
  • 2 sprigs fresh thyme
  • 1 cup chicken stock

Directions

    Preheat oven to 400°F. Lightly grease a roasting pan. Add apples and butter. Sprinkle with sugar, allspice and lemon juice. Top with zest and thyme. Bake for 25-30 mins, or until apple is tender, stirring halfway through cooking. Remove zest and thyme.

    Gently heat chicken stock then add baked apple mixture. Bring to a boil and cook for 5 mins, or until mixture thickens slightly. Blend until smooth.
