- 2 sticks butter or margarine
- 1 c. brown sugar, packed
- 2 eggs, separated
- 1 c. tart applesauce
- 1 3/4 c. whole wheat flour
- 1 tsp. baking soda
- 2 Tbsp. cocoa
- 1/2 tsp. cinnamon
- 1/2 tsp. nutmeg
- 3/4 c. seedless raisins
Directions

1Cream butter and sugar until smooth and fluffy.

2Add beaten egg yolks and applesauce.

3Sift the coarse husks out of flour 2 or 3 times, then sift the flour with soda and spices.

4Mix raisins through it.

5Add the dry ingredients to the first mixture.

6Last of all, fold in the stiffly beaten egg whites.

7Turn into two 8-inch square cake pans (greased and floured).

8Bake for 25 minutes at 325°.

9Frost with mocha frosting.
