- 1 1/2 c. chopped pecans
- 1/3 c. flour (to dredge pecans and citron in)
- 1/2 c. butter, softened
- 1 c. sugar
- 2 1/2 c. flour
- 1/2 tsp. salt
- 1/2 tsp. cloves
- 1 (16 oz.) can applesauce
- 1 tsp. lemon juice
- 1 1/2 c. raisins
- 1/4 c. chopped citron
- 1/4 c. shortening
- 2 eggs
- 2 tsp. soda
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 tsp. vanilla
- 1 tsp. brewed coffee
Directions

1Combine pecans and citron.

2Dredge in 1/3 cup of flour to coat evenly.

3Set aside.

4Cream butter and shortening.

5Add sugar gradually.

6Beat at medium speed of electric mixer until light and fluffy.

7Add eggs, one at a time, beating after each addition. Combine flour and next 5 ingredients, alternating with applesauce. Begin and end with flour mixture.

8Add vanilla, lemon juice and coffee.

9Mix well.

10Stir in pecan and citron mixture.
