Ingredients
- 3/4 c. margarine
- 1 c. sugar
- 1 egg
- 2 c. flour
- 1/4 tsp. baking powder
- 1 1/3 c. shredded coconut
- 1/2 c. chopped pecans
- 1/2 tsp. vanilla
- 1 (12 oz.) jar apricot preserves
Directions

1In a large mixing bowl, cream margarine and sugar.

2Add egg; mix well.

3In separate bowl, combine flour and baking powder. Gradually add to margarine mixture.

4Add coconut, nuts and vanilla; mix thoroughly.

5Press 2/3 of dough into greased 13 x 9 x 2-inch baking pan.

6Spread with preserves.

7Drop small pieces of remaining dough over preserves.

8Bake at 350° for 30 to 35 minutes, or until golden brown.

9Cool in pan.

10Cut into squares. Yields 36 bars.
