- 1 pkg. yellow cake mix
- 1 pkg. lemon gelatin
- 3/4 c. cooking oil
- 1 c. apricot nectar
- 1 tsp. lemon extract
- 4 eggs, separated
- 1 c. confectioners sugar
- juice of 1 lemon
Directions

1Place all ingredients except egg whites, confectioners sugar and lemon juice in mixing bowl in order listed.

2Beat until smooth. Fold in stiffly beaten, but not dry, egg whites.

3Pour in tube pan.

4Bake 1 hour at 325°.

5Combine confectioners sugar and lemon juice.

6Glaze cake while it is still hot.

7Yields 16 servings.
