- 2 1/2 c. flour
- 1 c. sugar
- 3 1/2 tsp. baking powder
- 1 tsp. salt
- 1 Tbsp. plus 1 tsp. grated orange peel
- 3 Tbsp. salad oil
- 1/2 c. milk
- 3/4 c. orange juice
- 1 egg
- 1 c. finely chopped nuts
- 1 c. finely cut up dried apricots
Directions

1Heat oven to 350°.

2Grease and flour a 9 x 5 x 3-inch loaf pan.

3Measure all ingredients into large mixer bowl.

4Beat on medium speed 1/2 minute.

5Pour into pan.

6Bake 55 to 65 minutes or until wooden pick comes out clean.

7Remove from pan.

8Cool thoroughly.

9(If self-rising flour is used, omit baking powder and salt.)
