- 2/3 cup butter Soft
- 1 7/16 cups caster sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 3 large eggs
- 1 3/8 cups plain flour
- 2 1/2 cups dried apricot
Directions

1Dice dried apricot and mix with 1 teaspoon plain flour, set aside.

2Beat soft butter, sugar, salt and vanilla extract till white and fluffy at medium speed.

3Lower speed add eggs one at a time and beat well until incorporated

4Stop machine and pour in plain flour and fold well with a rubber spatula.

5Lastly add in dried apricot and mix well.

6Pour batter into a 8 inch square tray (lined all sides up) and bake at preheated oven 170C for about 30 mins or skewer inserted comes out clean.
