Apricot Walnut Bread

Ingredients
- 4 egg whites
- 2/3 c. water
- 1/2 c. orange juice
- 1/4 c. vegetable oil
- 1 tsp. vanilla
- 3/4 c. quick oatmeal
- 1/2 c. chopped dried apricots
- 1 1/4 c. flour
- 1/2 c. brown sugar
- 1/2 tsp. baking soda
- 1/4 c. chopped walnuts
- 1 tsp. baking powder
Directions

1Combine the first 5 ingredients.

2Stir in oatmeal and apricots. Combine flour, brown sugar, baking powder and baking soda.

3Stir in apricot mixture just until moistened.

4Fold in nuts.

5Pour into a greased loaf pan (8 x 4 x 2-inch).

6Bake at 350° for 50 to 55 minutes or until done.

7Cool in pan 10 minutes, then remove to wire rack.
