- 1 c. coarse yellow corn meal
- 2 c. flour
- 1 1/2 c. sugar
- 1 Tbsp. baking powder
- 1/2 tsp. salt
- 4 eggs, separated (save whites)
- 1 tsp. vanilla
- 1 c. half and half
- 3/4 c. melted margarine or butter
Directions

1Combine in a bowl the dry ingredients (corn meal, flour, sugar, baking powder and salt).

2Combine egg yolks with vanilla, half and half and margarine or butter; add to dry ingredients. Stir until moistened.

3Beat egg whites until stiff, but not dry. Fold into mixture.

4Pour into well-greased 9 x 13-inch pan.

5Bake at 350° for 25 to 30 minutes.
