  • 1/2 lb. Monterey Jack cheese, grated
  • 1/2 lb. mild sausage
  • 1 1/2 c. buttermilk biscuit mix
  • 1 pkg. Shake 'n Bake (for pork)
  • 1 egg
  • 12 to 15 small jalapeno peppers

Directions

    Mix grated cheese and sausage well. Gradually mix in biscuit mix. Combine well to form a dough.

    Make a slit in each pepper and remove the seeds and stem.

    Place a small amount of Monterey Jack cheese in the middle of each pepper and close it.

    Make a flat pancake from the dough mixture and wrap around each pepper.

    Roll it in your hands to form egg shape.

    Roll each egg in Shake 'n Bake, then egg, then Shake 'n Bake again.

    The eggs may now be frozen or baked.

    Bake at 375° for 20 to 25 minutes. They will be soft after baking but will firm as they cool. They are best served warm.
