  • 3/4 lb. Monterey Jack cheese, grated
  • 1 lb. Owens hot sausage
  • 2 1/2 c. buttermilk biscuit mix
  • 10 medium jalapenos
  • 1 box Shake 'n Bake for pork
  • 2 eggs, beaten

Directions

    Slit peppers and remove seeds.

    Stuff small amount of cheese into pepper halves.

    Mix remaining cheese with sausage.

    Knead mixture.

    Gradually add biscuit mix and continue kneading to make dough.

    Pat out small amount of dough and shape around stuffed pepper half to form egg shape.

    Roll in Shake 'n Bake, in beaten eggs, then in Shake 'n Bake again.

    Bake at 350° for 30 minutes.
