- 3 cans artichoke hearts (8 1/2 to 14 1/2 oz.), drained
- 1 lb. bulk hot sausage
- 1 large onion, finely chopped
- 1 c. Italian seasoned bread crumbs
- 1 c. grated Parmesan cheese
- 3 eggs
- salt, red pepper, Accent and dried parsley
Directions

1Fry sausage and onion, making sure sausage is well broken up. Drain grease.

2Add artichoke hearts that are well drained and mashed.

3Add cheese and bread crumbs.

4Stir well and cook a few minutes.

5Cool slightly and then add eggs, one at a time, and stir thoroughly after each.

6Cook again for a few minutes, stirring constantly.
