Artichoke Pie

  • 1 clove garlic
  • 2 Tbsp. olive oil
  • 1 can artichoke hearts
  • 3 eggs
  • 1/4 c. grated cheese
  • 6 oz. shredded Mozzarella
  • 1 All-Ready pie crust

Directions

    Place pie crust in pie pan and flute edges.

    Dice garlic. Place oil, artichokes and garlic in pan and saute.

    In a medium size bowl, beat the eggs and add 1/4 cup grated cheese.

    Add Mozzarella and artichokes and garlic.

    Mix well.

    Pour into pie crust.

    Bake at 450° for 15 minutes.

    Lower the oven temperature to 350° and bake for 35 minutes.

    Take out of the oven. Wait until cooled and then serve.
