Artichoke Quiche

  • 1 (9-inch) pastry shell
  • 2 Tbsp. butter, melted
  • 1/3 c. chopped green onion
  • 2 eggs
  • 1 Tbsp. flour
  • 2/3 c. light cream (half and half)
  • 1 (14 oz.) can artichoke hearts, drained well and coarsely chopped
  • 1 c. grated hot pepper cheese (about 1/4 lb.)
  • 1 c. grated Cheddar cheese (about 1/4 lb.)

Directions

    Preheat oven to 400°.

    Prick pastry shell and bake 8 to 12 minutes.

    Remove shell and reduce temperature to 350°.

    In butter, saute green onion.

    In a large bowl beat eggs, flour and cream. Stir in artichokes, pepper cheese, onion-butter mixture and Cheddar cheese, reserving 3 tablespoons.

    Stir until well blended. Pour into shell and bake 35 minutes.

    Sprinkle top with remaining cheese and bake until center is firm, about 10 minutes.
