Artichoke Rice Salad

Ingredients

  • 1 pkg. chicken Rice-A-Roni, cooked and cooled
  • 2 green onions, chopped
  • 1/2 chopped green pepper
  • 8 stuffed olives, sliced
  • 1/4 tsp. curry powder
  • 1 can baby shrimp
  • 2 jars marinated artichoke hearts, cut in fourths
  • 1/3 c. mayonnaise plus 1 heaping tsp.
  • salt and pepper to taste

    Cool rice and mix all ingredients together.

    Chill overnight. Toss again and garnish with parsley and baby tomatoes.
