Ingredients

  • 2 (6 oz.) jar marinated artichoke hearts
  • 1 small onion, finely chopped
  • 1 clove garlic, minced or mashed
  • 4 eggs
  • 1/4 cup fine bread crumbs
  • 1/4 tsp. salt
  • 1/8 tsp. each: pepper, oregano, Tabasco sauce
  • 1/2 lb. shredded sharp cheddar cheese
  • 2 Tbsp. minced parsley

Directions

    Drain marinade from one jar of artichokes into frying pan. Chop all artichokes, set aside.

    Add onion and garlic to frying pan and saute till golden; about 5 minutes.

    In a bowl, beat eggs with fork, add bread crumbs, salt, pepper, oregano and

    Tabasco sauce. Stir in cheese, parsley, artichokes and onion mixture. Turn into a greased 7 x 11 inch baking dish.

    Bake at 350° for 30 minutes or until set.

    Let cool.

    May reheat in pan at 325° for 10 to 12 minutes to serve warm.
