- 4 beaten eggs
- 1/2 c. chopped onion
- 6 crushed saltine crackers
- 1/2 lb. grated Cheddar cheese
Directions

1Saute onions in oil from jars of artichoke hearts.

2Add remaining ingredients, stirring well after each.

3Season with salt and pepper.

4Pour into an 8 x 8-inch pan.

5Bake at 325° for 35 to 40 minutes.
