- 4 vine ripe tomatoes, tops
- trimmed and seeded
- extra virgin olive oil
- salt and pepper to taste
- STUFFING
- 1/2 cup bread crumbs
- 1/2 cup grated Parmigiano
- Reggiano cheese
- 1/2 tea. crushed red pepper
- 1 clove garlic chopped
- 2 cups arugula leaves
- 1 tbs. olive oil
Directions

1Arrange tomatoes on a broiler, drizzle with oil, season with salt and pepper. Combine bread crumbs, cheese, red pepper flakes, garlic, arugula and oil and pulse in food processor to make stuffing. Stuff tomatoes, place in center rack of oven. Bake 10-12 min. at 400*.
