- 2 1/4 lb center-cut salmon fillet
- 1 cup soy sauce
- 1/4 cup rice vinegar
- 1/4 cup freshly squeezed lemon juice
- 2 T oyster sauce
- 1 T fish sauce
- 1 T dark, toasted sesame oil
- 1 1/2 teaspoon chili paste
- 1/2 cup (2) sliced scallions
- 2 T minced garlic (6-8 large cloves)
- 2 T fresh ginger, minced
- 1 1/2 cups panko (Japanese bread crumbs)

In a bowl combine the soy sauce, rice vinegar, lemon juice, oyster sauce, fish sauce, sesame oil, chili paste, scallions, garlic, and ginger. Pour 1\/3 of the mixture over salmon. Sprinkle panko evenly over fillet. Pour rest of sauce mixture evenly over panko. Soak panko completely and spoon any run off onto salmon. Set aside for 10 min., leaving all sauce in pan.","4":"Roast salmon for 18 min. or for 12 min. per inch at the thickest part of the salmon. The internal temperature should be 120 F on a meat thermometer when it's done. Remove from oven. Wrap tightly with foil and allow to rest for 15 min. Serve hot or at room temperature."}
