Asian Tomato Rice

Ingredients
- 3 tablespoons oil
- 2 shallots, minced (optional)
- 3 garlic cloves, minced
- 2 tablespoons tomato paste
- 2 tablespoons soy sauce or 1 -2 teaspoon fish sauce or 12-1 12 teaspoon maggi seasoning sauce
- 18 teaspoon Chinese five spice powder
- 4 cups cooked and chilled jasmine rice
- salt, as needed
- ground black pepper, as needed
- cilantro, as needed
Directions

1In a large nonstick frying pan put the oil, shallots and garlic.

2Cook over medium heat for 2 or 3 minutes until the edges of the garlic are a light brown.

3Stir in the tomato paste, soy sauce, and Chinese 5 spice powder and cook for another minute.

4Add the rice and stir until well blended.

5Add salt and ground black pepper to taste if desired.

6Garnish with chopped fresh cilantro or a thinly sliced green onion.

7Variations: Stir in 1/4 - 1/2 cup frozen peas the last 2 minutes and/or add a cooked scrambled egg.
