  • 1 Pound Asparagus
  • 1/2 Pound Swiss Cheese / 1 Pound Mozzarella Cheese
  • 1/2 Dozen Eggs
  • Fresh Ripe Tomatos
  • Oil / Butter
  • Salt/Pepper to taste

Directions

    Lightly steam asparagus -1/2 minutes.

    Beat eggs / Saute until slightly firm

    Put into baking dish with a little oil/butter (your choice) Then place eggs into dish layer cheese / sliced tomato / asparagus until used up/ Generally two to three layers / Top with cheese / asparagus and broil for two to three minutes until just cheese is golden brown.
