Asparagus Cheese Casserole

Ingredients
- 1 Tbsp. chopped onion
- 3 Tbsp. butter, melted
- 2 Tbsp. flour
- 1 c. milk
- 1/2 tsp. salt
- dash of pepper
- 1 c. shredded Cheddar cheese (4 oz.)
- 2 c. canned asparagus, drained
- 3 hard-cooked eggs, sliced
- 1 c. buttered bread crumbs or grated Parmesan cheese
Directions

1Saute onion in butter until tender.

2Blend in flour.

3Add milk slowly, stirring constantly and cook until mixture thickens.

4Add salt, pepper and cheese and mix well.

5Alternate layers of asparagus with egg slices in a buttered casserole.

6Cover with cheese sauce.

7Top with buttered crumbs or Parmesan cheese.

8Bake at 350° for 25 minutes.

9Yield: 6 to 8 servings.
