- 2 cans asparagus spears
- 3 1/2 Tbsp. flour
- 4 eggs, scrambled
- 2 c. grated sharp cheese
- chopped parsley
- 1/4 lb. butter, less 2 Tbsp.
- 1 c. evaporated milk
- 1/2 c. Italian bread crumbs
- paprika
Directions

1Drain asparagus; reserve 1 cup liquid.

2Melt butter.

3Add flour slowly.

4Add milk and liquid; stir constantly until thick. Add 1 1/2 cups cheese; stir until smooth.

5Add scrambled eggs. Season to taste.

6Pour a layer of sauce in casserole dish.

7Add asparagus and pour remaining sauce on top.

8Combine cheese, crumbs, parsley and paprika; sprinkle on top.

9Bake at 350° for 30 minutes.
