  • 3 eggs, beaten
  • 1 1/2 c. milk, scalded
  • 1 c. cut asparagus
  • 1 Tbsp. minced onion
  • 3 Tbsp. butter, melted
  • 1/2 c. cracker crumbs
  • salt and pepper

Directions

    Beat eggs, milk, onion, asparagus, melted butter, salt and pepper.

    Sprinkle crumbs on top and add a dash of paprika, if desired.

    Bake at 350° for 45 to 60 minutes or until completely set.

    This can be made ahead and baked at serving time.
