Asparagus Pie Recipe

Ingredients

  • 1 pkt (8-ounce) frzn asparagus
  • 1 c. Cubed ham, cooked
  • 1 c. Half and half
  • 1 can (4-ounce) mushrooms, liquid removed
  • 1 tsp Salt
  • 3 x Large eggs, slightly beaten
  • 1/3 c. Minced onions (optional)
  • 1 x Unbaked, 9-inch pie crust

Directions

    Cook asparagus and drain well.

    Combine Half and Half, onions, mushrooms and salt in saucepan.

    Simmer 1 minute.

    Add in a small amount of the warm mix to the Large eggs and blend well.

    Add in to mix in the pan, stirring to blend.

    Arrange liquid removed asparagus and ham in the crust.

    Pour warm mix over.

    Pepper and nut- meg may be sprinkled lightly over the surface.

    Bake at 400 for 15 min; reduce heat to 325 and bake 20-25 min longer or possibly till a knife blade inserted in pie center comes out clean.
