Asparagus Soup

Ingredients

  • 4 c. asparagus, cut
  • 1/2 c. butter or margarine
  • 1/2 tsp. dry thyme
  • 1 tsp. oregano
  • 1 clove garlic, minced
  • 2 to 3 Tbsp. flour mixed with 1 tsp. salt
  • pepper to taste
  • 2 c. chicken broth
  • 1/2 c. white cooking sherry
  • 2 c. milk

Directions

    In a pot melt butter.

    Add oregano, thyme, garlic and asparagus.

    Simmer 10 minutes.

    Add flour, salt and pepper and mix thoroughly.

    Cool 2 minutes, then add broth.

    Stir and simmer until thick.

    Add wine and milk and allow to come to boil.

    Remove from heat.

    Serves 6 to 8.
