- 2 lbs asparagus, cleaned and trimmed
- 6 eggs
- 1 tablespoon virgin olive oil
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 cup seasoned bread crumbs
- 2 tablespoons virgin olive oil
Directions

1Preheat oven 375 degrees.

2Oil bottom and sides of 8x8x2 pan with 2 Tbsp olive oil.

3Cook asparagus until tender & let cool.

4Cut asparagus into small pieces.

5Beat eggs with 1 Tbsp olive oil, add asparagus, salt & pepper, mix well.

6Pour into prepared pan & drizzle a little olive oil on top.

7Bake approximately 45 minute.

8Should be nice & brown, Cool & cut into squares to serve.
