- 2 (10 ounce) packages spinach
- 1 cup red onion, thinly sliced
- 1 tablespoon garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon pepper, freshly ground
- 2 -3 tablespoons feta cheese, crumbled
Directions

1Remove large stems from packages of spinach.

2Steam or cook until wilted (3 minutes).

3Refresh with cold water.

4Press to remove excess moisture.

5Set aside.

6In a large skillet, saute sliced red onion and minced garlic on low heat in olive oil for 2 minutes.

7Add cooked spinach, balsamic vinegar, and freshly ground pepper.

8Saute until warm.

9Arrange spinach on serving plate.

10Top with 2-3 tablespoons of crumbled feta cheese.
