Ingredients
- 2 tablespoons olive oil
- 1 medium onions
- 2 each garlic cloves
- 2 medium potatoes diced
- 2 cups turnip diced
- 1 1/2 cups tomatoes diced
- 1 cup water
- 2 tablespoons parsley leaves
- 1/2 teaspoon oregano
- 1/2 teaspoon marjoram
- 1 teaspoon basil
- 1 pinch mint leaves
- 1 pinch dill weed
- 1 x pasta, fettuccine
Directions

1Heat oil in a large pot.

2Add onion & garlic & saute gently for 5 minutes.

3Add potatoes & turnip & continue to saute for another 3 minutes, stirring occasionally.

4Mix in chopped tomatoes, raise heat & bring to a gentle boil.

5Stir in the water & the rest of the ingredients, except for the fettuccine.

6Simmer for 35 minutes or until all the vegetables are tender.

7Add more water if necessary.

8Meanwhile cook fettuccine according to package instructions.

9When cooked, serve vegetables over cooked fettuccine.
