Ingredients

  • 1/4 c. margarine
  • 1/4 c. flour
  • 1/2 tsp. salt
  • 5 c. (5 medium) peeled, sliced raw potatoes
  • 2 c. milk
  • 4 oz. (1 c.) shredded American or Cheddar cheese
  • 1/2 c. Parmesan cheese
  • 1 c. oil
  • 1/2 c. milk
  • 3 eggs
  • 1 tsp. vanilla
  • 1 c. sugar
  • 1 1/2 tsp. baking powder
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 large box instant vanilla pudding
  • 2 c. flour
  • 1 c. chopped nuts

Directions

    Add oil, milk, eggs and vanilla to starter in bowl, mix well and add remaining ingredients (except nuts).

    Stir well and add nuts.

    Pour into 2 large loaf pans, well-greased, or 3 small loaf pans.

    Sprinkle extra cinnamon and sugar on the top of each loaf before baking, if desired.

    Bake at 325° for 1 hour.
