- 1/4 c. margarine
- 1/4 c. flour
- 1/2 tsp. salt
- 5 c. (5 medium) peeled, sliced raw potatoes
- 2 c. milk
- 4 oz. (1 c.) shredded American or Cheddar cheese
- 1/2 c. Parmesan cheese
- 1 c. oil
- 1/2 c. milk
- 3 eggs
- 1 tsp. vanilla
- 1 c. sugar
- 1 1/2 tsp. baking powder
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 1/2 tsp. baking soda
- 1 large box instant vanilla pudding
- 2 c. flour
- 1 c. chopped nuts
Directions

1Add oil, milk, eggs and vanilla to starter in bowl, mix well and add remaining ingredients (except nuts).

2Stir well and add nuts.

3Pour into 2 large loaf pans, well-greased, or 3 small loaf pans.

4Sprinkle extra cinnamon and sugar on the top of each loaf before baking, if desired.

5Bake at 325° for 1 hour.
