Aussie Beef and Beer Pie

- 1 12 lbs lean beef, cut into 1 1/2 inch pieces
- 2 tablespoons olive oil
- 2 tablespoons all-purpose flour
- 1 onion, coarsely chopped
- 2 garlic cloves, crushed
- 2 teaspoons chopped fresh thyme
- 1 bay leaf (optional)
- salt & pepper (to taste)
- 1 (15 ounce) can diced tomatoes, drained
- 1 cup beer
- ready-made pie crust (thawed if frozen)
- 1 ready-made pie crust, just thawed
- 1 egg, lightly whisked
- 2 frozen puff pastry sheets, just thawed
- tomato sauce (ketchup)
Directions

1Season meat with salt and pepper.

2Heat the oil in a large saucepan over medium heat.

3Add the beef and saute stirring occasionally, for 5 minutes or until golden brown.

4Add the onion, garlic and thyme and cook, stirring, for about 10 minutes or until onion is caramelize and soft (careful that the garlic doesn't burn).

5Sprinkle flour on onions, stirring well to combine.

6When flour is absorbed, stir in the tomatoes and beer.

7Cover and bring to a simmer; reduce heat to low and cook until tender, approximately 1 hour.

8Set aside for 30 minutes to cool.

9Preheat oven to 425 degrees F.

10Place a baking sheet on the middle shelf.

11Cut the pastry sheet into quarters and line 4 round 5-inch tins with the pastry, allowing the sides to overhang.

12Brush the edges with egg.

13Divide the beef mixture evenly among the pastry shells.

14Cut each puff pastry sheet in half diagonally.

15Top the pies with puff pastry and trim excess and press the edges to seal.

16Brush the pies with egg.

17Cut a small cross in the center of each pie.

18Place the pies on the baking tray and bake for 25 minutes or until golden and puffed.

19Serve with tomato sauce (ketchup).
