- 1 stick Unsalted Butter
- 1/2 cups Sugar
- 1 whole Egg Yolk (no White)
- 1/2 teaspoons Vanilla Extract
- 1/4 teaspoons Salt
- 1-1/2 cup All-purpose Flour
- 1/2 cups Chopped Nuts (pecans Or Walnuts)
- 1/2 cups Raspberry Jam
Directions

1Preheat oven to 300 degrees.

2Cream butter and sugar until light and fluffy. Add egg yolk, vanilla and salt. Beat until smooth.

3Gradually add flour until a soft dough forms. Cover and chill the dough for 2 hours.

4Measure out dough in teaspoonfuls, roll in nuts and place on a greased cookie sheet. Make an indentation with your thumb and fill with jam. Bake for 15-20 minutes or until done.

5Remove from heat, cool on wire rack and store in an airtight container up to a week.
