  • 1 3/4 c. chicken broth
  • 1 c. orange juice
  • 1 1/2 c. butternut squash
  • 1/2 c. onion, chopped
  • 1/3 c. wild rice, uncooked
  • 1/3 c. brown rice, uncooked
  • 1/4 tsp. salt, optional
  • 1/4 tsp. cinnamon
  • 1/4 tsp curry powder
  • 1/8 tsp. cardamon, ground
  • 1/8 tsp. ginger
  • 1/2 c. raisins
  • 1/3 c. pearl barley
  • 1/4 c. pecans, toasted

Directions

    Combine broth and orange juice in a large sauce pan;

    bring to a boil.

    Add squash and next 8 ingredients (onion to ginger). Cover;

    reduce heat and simmer 20 minutes.

    Add raisins and barley.

    Cover and cook 35 to 40 minutes or until grains are tender and liquid is absorbed.

    Stir in pecans, serve immediately. Yield: 5 servings.
